 Red Wine Cake: Colombia #176

A rich, moist, chocolate cake with just a hint of wine, which intensifies the chocolate flavor. In Colombia it is known as Torta Negra.      


Ingredients:

  • 2 c. All-purpose flour
  • 3/4c. Unsweetened cocoa powder
  • 1-1/4 tsp. Baking soda
  • 1/2 tsp. Salt
  • 2 sticks unsalted butter, softened
  • 1-3/4 c. Sugar
  • 2 large eggs
  • 1 tsp.vanilla extract
  • 1-1/4 c. Dry red wine
  • Confectioner’s sugar for dusting
  • Whipped cream, for serving
  1. Preheat oven 350F.. Flour 12 cup Bundt pan.
  2. Whisk flour, cocoa, baking soda, salt together.
  3. In a large bowl of mixer, beat the butter with sugar at medium high speed until fluffy, about 4 minutes.
  4. Add the eggs, one at a time, beating until incorporated.
  5. Add vanilla. Beat for 2 minutes.
  6. Working in 2 batches, alternately fold in the dry ingredients and the wine, until just incorporated.
  7. Scrape the batter into the prepared pan and bake for 45 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes, then turn it out onto a rack; let cool completely.
  9. Dust the cake with confectioners’ sugar and serve with whipped cream.
 Results: This is so easy and delicious! I didn’t make any adaptations.
Bottom Line: Keeper! Some tasters, from Colombia, said the versions they have had the cake had more of a wine flavor.
