 Whoopie Pies: USA #175

The whoopie pie maybe considered either a cookie, pie, sandwich, or a cake. I’m going with cake. It’s made of 2 round shaped pieces, usually chocolate cake, with a sweet creamy filling/frosting sandwiched between them. As the story goes, Amish men who, when they found these treats in their lunch boxes, would explain, “Whoopie!”     LOL  The first commercially sold whoopie pie was in Lewiston, Maine 1925. They are always a family favorite, especially the ones my niece, Shannon, makes. This is her recipe.  


Cake:

  • 1 c. Flour.                                            
  • 1/2 c. Cocoa
  • 1/2 tsp. Baking soda
  • 1/4 tsp. Salt
  • 2/3 c. Packed light brown sugar
  • 6 T. Butter, room temperature
  • 3/4 tsp. Vanilla
  • 1 egg
  • 1 c/ buttermilk
Filling:
  • 2-1/4 c. Confectioners’ sugar
  • 5 T. Butter, room temperature
  • 3 T. Milk
  • 1 tsp. Vanilla
  • 1/8 tsp. Salt
  1. Cake: Have all ingredients at room temperature.  Preheat oven 325F.  Grease and flour pan.
  2. In a bowl whisk flour, cocoa, baking soda and salt together.
  3. In a mixer, beat brown sugar and butter together, about 1 minute
  4. Add vanilla and egg, beat until fluffy.
  5. Reduce speed and add flour mixture in 3 additions alternating with buttermilk.
  6. Fill each cup with 1-1/2 T of mixture.
  7. Tap pan to distribute batter and release air bubbles.
  8. Bake about 10 mins. 
  9. Filling: In a bowl beat on low, confectioners’ sugar, butter, milk, vanilla and salt until combined.
  10. Then increase speed and beat until fluffy—-about 1 minute.
  11. Assemble: Spread about 2 T. On flat side of one cake.
  12. Top with the domed side up of 2nd cake.
Results: This is such an easy recipe. The only thing that would make it easier, dare I say, would be a store bought cake mix. Gasp!!! 
I tried various fillings, including ice cream, which was a big hit.
I’ve also experimented with different sizes. For a party I thought bite -size would be easier for guest. I ended up making mini cupcakes and putting them together. It sort of worked. Next time I’ll make them on a jelly roll pan and slice them the size I want. 
I recommend a whoopie pie pan. William Sonoma sells them.

Bottom Line: Family favorite, Although there isn’t much difference between a whoopie pie and cutting a cupcake in half horizontally and putting the bottom half on top of the frosting. Just saying.
