Ted Lasso’s Biscuits :USA #161B
If you haven’t watched “Ted Lasso “ on HBOMax, you probably don’t know about these biscuits. Everyday Ted brings a small, pink box with these biscuits inside to his boss, Rebecca. She has no idea that Ted makes these for her. Rebecca wants to know what bakery he is purchasing them from. So far in the series she hasn’t discovered the true origin. Having said all that, I would like to share with you Ted’s recipe. These are a pretty classic, buttery shortbread. All they take are 4 basic ingredients——-
Ingredients:
- 2 c. All-purpose flour, sifted
- 3/4 c. Confectioners’ sugar
- 1 c. Softened, unsalted butter,
- 1/4 tsp. Kosher salt
- Preheat oven 300F. Butter 8” square baking pan.
- Using a stand mixer or hand mixer, beat the butter for 3-5 minutes until light and fluffy.
- Slowly add the confectioners’ sugar, being careful not to get sugar all over you.
- Sift flour and salt together.
- Add flour mixture to butter mixture. Mix until the dough comes together.
- Transfer the dough to the pan and flatten it using your hands. Make sure it spreads evenly.
- Chill the dough for 30 minutes.
- Bake for 45-60 minutes, or until it looks golden-brown but is still a little soft to the touch.
- Let cool completely before cutting.
- Sprinkle with confectioners’ sugar
- Place in a pink cardboard box to get the full Ted Lasso experience.
Results: So easy and delicious. What’s not to like about buttery shortbread cookies. However, I did add chopped pecans. Heads up, they’re a bit dry. I made an origami pink box.<3
Bottom Line: Keeper! These are wedding cookies, aka Russian Tea Cakes, in bar form. I can eat them in any shape. : )
