 Raisin Cake- United Kingdom #138

In researching the origin of this cake I was taken aback to learn that Raisin Cake is mentioned in Chapter 6:19 in the second Book of Samuel, Hosea 3:1 Raisin Cake was distributed by David, who reigned as the second king of the United Kingdom of Israel and Judah c. 1010-970 BCE. It also appears in the United States in the early 1900s. Who knew? Not I.  Having said all that, this is an eggless, very dense and moist loaf cake. Some say it originated during WWII, when eggs, milk and butter were in short supply. 


Ingredients:

  • 1 c. Packed brown sugar
  • 1-1/4 c. Water
  • 1/3 c. Shortening
  • 1/4 tsp. Ground cloves
  • 1/2 tsp. Ground nutmeg
  • 2 tsp. Ground cinnamon
  • 2 c. Raisins
  • 2 c. All-purpose flour
  • 1 tsp. Baking powder
  • 1 tsp. Baking soda
  • 1 tsp. Salt
  1. In a saucepan, combine brown sugar, water, shortening, cloves, nutmeg, cinnamon and raisins.
  2. Bring to a boil and continue boiling for 3 minutes.  Remove from heat and allow to cool.
  3. Preheat oven 325F. Grease and flour and 8x4 inch loaf pan.
  4. Sift together flour, baking powder, baking soda and salt.
  5. In a large bowl, combine th raisin mixture with flour mixture.
  6. Pour into prepared pan.
  7. Bake for 55 minutes, or until toothpick inserted into cake comes out clean. 
Results: Yum! This cake is so easy and perfect for this time of year. I made one addition- 1 cup of chopped walnuts. I served it with cream cheese. It would be equally good toasted.
