Queen Elizabeth Cake- Canada #137
The Queen Elizabeth Cake was supposedly made for Queen Elizabeth II’s coronation in 1953. It has become a Canadian classic. It’s a scrumptious date nut cake and crowned with a broiled coconut topping.
Cake:
- 1 c. Boiling water
- 1 c.dates, pitted and chopped
- 1/4 c. Butter, softened
- 1 c. Sugar
- 1 egg
- 1 tsp. Vanilla extract
- 1-1/2 c. All purpose flour
- 1 tsp. Baking soda
- 1 tsp. Baking powder
- 1/2 tsp. Salt
- 1/2 c. chopped walnuts
Topping:
- 1 c. Flaked coconut
- 2/3 c. Packed brown sugar
- 6 T. Butter
- 1/4 c. Cream
- Cake: Pour boiling water over dates in a small bowl, and let stand until cool.
- Preheat oven 350F. Grease a 9x13 inch pan.
- Cream 1/4 c. Butter and sugar together in a mixing bowl; beat in egg and vanilla.
- Measure flour, baking powder, soda, salt and nuts into a small bowl.
- Add flour mixture to creamed mixture in three parts alternately with date mixture in two parts, beginning and ending with dry mixture.
- Spread batter into pan.
- Bake 30-40 minutes, or until an inserted wooden pick comes out clean.
- Topping: Mix coconut, brown sugar, 6 T. Butter and cream in a small saucepan over medium heat. Boil for 3 minutes.
- Spread over warm cake, and brown under broiler.
Results: This is very good and easy to make. It only took 25 minutes to bake. The cake was brown on the bottom. So, watch your timing. Next time I will add more nuts because I really like nuts. I sprinkled more coconut on top before putting under the broiler so that it would not look so brown. Other than those few adaptations, everything else was the same.
Bottom Line: I served this at my granddaughter’s baptism. My son loved them. Every time I saw him he was eating one. I would consider them a success. Having said that, I probably won’t make them again. LOL
