 Queen Elizabeth Cake- Canada #137

The Queen Elizabeth Cake was supposedly made for Queen Elizabeth II’s coronation in 1953. It has become a Canadian classic. It’s a scrumptious date nut cake and crowned with a broiled coconut topping.       


Cake:

  • 1 c. Boiling water
  • 1 c.dates, pitted and chopped
  • 1/4 c. Butter, softened
  • 1 c. Sugar
  • 1 egg
  • 1 tsp. Vanilla extract
  • 1-1/2 c. All purpose flour
  • 1 tsp. Baking soda
  • 1 tsp. Baking powder
  • 1/2 tsp. Salt
  • 1/2 c. chopped walnuts
Topping:
  • 1 c. Flaked coconut
  • 2/3 c. Packed brown sugar
  • 6 T. Butter
  • 1/4 c. Cream
  1. Cake: Pour boiling water over dates in a small bowl, and let stand until cool.
  2. Preheat oven 350F. Grease a 9x13 inch pan.
  3. Cream 1/4 c. Butter and sugar together in a mixing bowl; beat in egg and vanilla.
  4. Measure flour, baking powder, soda, salt and nuts into a small bowl.
  5. Add flour mixture to creamed mixture in three parts alternately with date mixture in two parts, beginning and ending with dry mixture.
  6. Spread batter into pan.
  7. Bake 30-40 minutes, or until an inserted wooden pick comes out clean.
  8. Topping: Mix coconut, brown sugar, 6 T. Butter and cream in a small saucepan over medium heat.  Boil for 3 minutes.
  9. Spread over warm cake, and brown under broiler.
Results: This is very good and easy to make. It only took 25 minutes to bake. The cake was brown on the bottom. So, watch your timing. Next time I will add more nuts because I really like nuts. I sprinkled more coconut on top before putting under the broiler so that it would not look so brown. Other than those few adaptations, everything else was the same.
Bottom Line: I served this at my granddaughter’s baptism. My son loved them. Every time I saw him he was eating one. I would consider them a success. Having said that, I probably won’t make them again.  LOL
