Piernik -Honey Bread/Cake: Poland#130
This is a Polish semi-sweet, spiced honey cake, with walnuts and raisins. It’s yummy toasted with butter.
- 1 c. Sugar
- 1 tsp. Ground cinnamon
- 1/2 tsp. Ground cloves
- 1/2 tsp. Ground allspice
- 4 large eggs
- 1/2 c. Milk
- 1/2 c. Vegetable oil
- 1 tsp. Baking soda
- 1 c. Honey
- 4 c. All-purpose flour
- 1/2 c. Raisins
- 1/2 c. Chopped walnuts
- In a large bowl, mix the sugar, cinnamon, cloves, allspice, and eggs.
- Stir in the milk and oil, and mix in the baking soda.
- Place honey in a small pot, and bring to a boil.
- Stir melted honey into the spice mix.
- Add flour .
- Fold in the raisins and walnuts.
- Stir by hand with a sturdy spoon for 10 minutes.
- Allow the dough to sit 1 hour.
- Preheat oven 325F. Lightly grease 4-8X4” loaf pans.
- Fill each with about 2” of batter.
- Bake 1 hour 15 minutes or until a toothpick inserted in center comes out clean. Bread will be brown in color and will crack on top.
- Cool in pans for 10 minutes.
Results: Piernik is easy to make. I added craisins (dried cranberries) along with the raisins and walnuts. I also made 1 loaf larger and then 2- 8x4”. Only because I read the directions wrong but caught myself in time to make 2 smaller loafs, which I froze. There’s only so much we can eat. The smaller loafs took only 1 hour to bake. The larger loaf took 1 hour and 15 minutes.
Bottom Line: Good, but I like other cakes better. Moving on.
