Panpepato-Italy #124

Panpepatp (peppered bread) is a round, sweet cake typical of certain regions in Italy. It is made from fruits, nuts, pepper, cinnamon, nutmeg, and orange and lime zest, mixed with cocoa, honey and flour. After baking, it is covered with a layer of chocolate. A favorite during the Christmas holidays.

Ingredients:

  • 200 g. all purpose flour, sifted
  • 80 g. cocoa powder, sifted
  • 1/4 tsp. ground cloves 
  • 1/2 tsp. ground cinnamon
  • freshly ground black pepper
  • 1/8 tsp. ground nutmeg
  • 100 g. whole almonds
  • 100 g. candied peel, chopped
  • 100 g. honey
  • 100 ml. milk
  • 200 g. dark chocolate
  1. Preheat oven 300F.  Line baking sheet with parchment paper and set aside.
  2. In a large bowl, sift together flour, cocoa powder, spices. 
  3. Add almonds and candied peel to dry ingredients.
  4. Add honey and stir until combined.
  5. Add milk and work it in using your hands until you have an even ball of dough.  
  6. Shape the dough into a flattered dome and ease it onto the lined baking sheet.
  7. Bake for 1 hour and 15 minutes, or until the cake sounds hollow when tapped.
  8. Transfer to a rack set over the same baking sheet you baked it on and leave to cool gently.
  9. Place the chocolate in a heatproof bowl set over a pan of simmering water until completely melted. Drizzle over the top of the cake, then leave to set and cool before slicing.

Results:   I made this with my grandson, which is a treat by itself.  So, having said that, this was not his fault. LOL. The only change I made was to add more milk to the dough, which was like dust.  These final photos make the cake look absolutely delicious. However, I don't know if I baked it too long or I made it wrong, but it was hard as a rock.  We were afraid we would chip a tooth when eating it. It softened after 2 days, which made it easier to eat, but not by much.  We certainly put in the effort to eat it but be forewarned people. The recipe called for baking 1 hour and 15 minutes. I baked it for 50 minutes. I can't imagine how hard it would have been if I had baked it for 75 minutes. Bottom Line: This one is off the list.
