Ostkaka (Swedish Cheesecake) #121
A fairly easy, baked cheesecake that's less sweet than the American version. This is also Gluten Free.
Ingredients:
- 2 eggs
- 1/4 c. sugar plus 4 T.
- 1/4 c. almond flour or 4 T. ground almonds
- 4 T. rice flour
- 1 c. 1/2 and 1/2
- 1-1/4 c. 4% cottage cheese
- 7 oz. strawberries
- 1 T. sugar
- optional a few grinds of black pepper
- Preheat oven 350F. Lightly grease 8" cake pan.
- Blend together the eggs and sugar in a food processor.
- Add the ground almonds, rice flour, half and half, and cottage cheese, mix.
- Pour the mixture into your pan and bake for 50-60 mins., or until it rises and is lightly browned on top.
- When the cheesecake is almost finished baking, slice the strawberries and place in a bowl with the sugar and a few grinds of black pepper. Toss.
- Remove cake from oven and cool.
- Serve warm and topped with strawberries.
Results: This is very easy to make. I didn't make any adaptations.
Bottom Line: Good, but not a favorite. I thought it was better chilled.
