Ostkaka (Swedish Cheesecake) #121

A fairly easy, baked cheesecake that's less sweet than the American version.  This is also Gluten Free.

Ingredients:

  • 2 eggs
  • 1/4 c. sugar plus 4 T.
  • 1/4 c. almond flour or 4 T. ground almonds
  • 4 T. rice flour
  • 1 c. 1/2 and 1/2 
  • 1-1/4 c. 4% cottage cheese
  • 7 oz. strawberries
  • 1 T. sugar
  • optional a few grinds of black pepper

  1. Preheat oven 350F. Lightly grease 8" cake pan.
  2. Blend together the eggs and sugar in a food processor.
  3. Add the ground almonds, rice flour, half and half, and cottage cheese, mix.
  4. Pour the mixture into your pan and bake for 50-60 mins., or until it rises and is lightly browned on top.
  5. When the cheesecake is almost finished baking, slice the strawberries and place in a bowl with the sugar and a few grinds of black pepper.  Toss.
  6. Remove cake from oven and cool.
  7. Serve warm and topped with strawberries.

Results: This is very easy to make. I didn't make any adaptations. 

Bottom Line: Good, but not a favorite. I thought it was better chilled.
