Chocolate-Chocolate Chip Nut Muffins- Unknown #114

Chocolate-Chocolate, enough said.
Ingredients:
  • 2 c. all-purpose flour
  • 1/2 c. unsweetened cocoa powder
  • 1-1/2 c. sugar
  • 1/2 tsp. baking soda
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1-1/4 c. milk
  • 1 egg
  • 2 T. vegetable oil
  • 1 tsp. vanilla extract
  • 1 c. semisweet chocolate chips
  • 3/4 c. chopped walnuts
  • 1/3 c. whole almonds
  • 4 T. raw sugar to sprinkle on top (can also substitute with regular sugar)
  1. Preheat oven 350F.  Grease muffin cups or line with paper muffin liners.
  2. In medium bowl, sift together flour, cocoa, sugar, baking powder, baking soda and salt.
  3. In large bowl sir in milk, egg oil and vanilla.
  4. Mix dry ingredients to milk mixture; beat well.
  5. Add chocolate and chips and walnuts, stir well.
  6. Fill muffin cups 3/4 full.
  7. Poke almonds into tops of unbaked muffins.
  8. Sprinkle muffins with sugar.
  9. Bake 20-25 minutes, or until toothpick inserted in center comes out clean.

Results: Delicioso! Confession---My daughter-inlaw made these and my son took the pics. However, I did provide the recipe.

Bottom Line: Keeper! The muffins and my daughter-inlaw, the son is iffy.
