Merveilleux- France #109
A meringue dessert to die for. Merveilleux is a crunchy meringue sandwich, with a hint of coffee, filled with a layer of whipped cream and covered with chocolate shavings. A white sugary cloud of deliciousness.
Meringue:
- 2/3 c. + 2-1/2 T. egg whites, at room temperature
- 2/3 c. + 3-1/2 T. fine sugar
- 1-1/2 c. + 5 tsp. powdered sugar
- 1-1/2 tsp. of your favorite ground coffee.
Whipped Cream:
- 3 c. + 4 T. whipping cream
- 1/3 c. sugar
Decoration:
- Meringue: Preheat oven 195F. Draw circles 2-1/2" on parchment paper. Turn the paper over so that the drawing is facing down.
- Using an electric mixer, beat egg whites, gradually add sugar and whisk till the meringue becomes glossy.
- Once egg whites are set, add powdered sugar, ground coffee and mix with a rubber spatula.
- Place the meringue in a pastry bag and pipe small spirals on drawn circles.
- Bake meringues for 2 hours.
- Turn off the oven and leave the meringues with the door closed for another hour.
- Whipping cream: Using an electric mixer, whip the cream, gradually adding sugar, until stiff.
- Assemble: Dollop whip cream on one meringue. Finish with another meringue on top, flat side up.
- Place meringue sandwiches on a board and cover sides and tops with whip cream.
- Place meringues in freezer for about 10 mins.
- Roll/sprinkle chocolate on sides and top. Refrigerate.
Results: I made 1/2 the recipe, big mistake. I only had 6. They were gone in a heartbeat. I watched one person eat one in 2 bites. They're sweet, light and delicious! I couldn't get a dark chocolate bar, due to limited grocery shopping. I used dark chocolate chips and put them in a coffee bean grinder for a couple of whirls. It worked fine. That's the only adaptation I did.
Bottom Line: Woohoo!!! A definite keeper.
