Magdalenas- Spain #103


Magdalenas are small sweet cakes that are light and fluffy.  the Spanish traditionally eat them at breakfast with coffee con leche, and hot chocolate.
A friend took some awesome photos for this baking session.


  • Ingredients:

  • 4 eggs
  • 1 c. sugar- separated
  • 4 oz. unsalted butter
  • 1-2/3 c. white flour
  • 1 T. baking powder
  • 1 lemon, zest of
  • 1 tsp. vanilla extract
  • 1 T. milk

  1. Preheat oven 375F. Line muffin tins with paper liners.
  2. Measure 1/4 cup sugar into small bowl and set aside.
  3. Beat the eggs with 3/4 c. sugar until the mixture is light.
  4. In a small sauce pan, melt the butter. Make sure the butter cools slightly and is not bubbling.
  5. As eggs are beating slowly pour in the melted butter, making sure to mix thoroughly.
  6. Stir in the lemon zest, vanilla, and milk.
  7. In a separate bowl, mix flour and baking powder.
  8. Continue beating egg mixture and add the flour mixture. Mix well. (the batter will be very thick)
  9. Fill each muffin cup 1/2-3/4 full. Sprinkle each with reserved sugar.
  10. Bake 18-20 minutes or until golden in color.
  11. Cool and enjoy.

Results: Well, they didn't look like the picture. Lol. these aren't difficult to make. Not sure where I went wrong. They were pretty dry. Heating them and adding butter helped. Day 2 they were real dry.

Bottom Line: Moving on.
