Makowiec (Poppy Seed Cake/Roll)-Poland #102

A traditional Polish dessert, especially popular during the Christmas season.

Dough:

  • 4 tsp. active dry yeast
  • 1 T. sugar
  • 1 pinch salt
  • 1 c. milk, warmed
  • 3 c. flour
  • 1 egg
  • 1 egg yolk (save egg white)
  • 4 tsp. vanilla extract
  • 4 T, butter, melted

Filling:

  • 8 oz. poppy seeds, rinsed
  • 1/2c. sugar
  • 4 T. butter
  • 1/4 c. raisins
  • 3/4 c. almonds, ground
  • 1/4 tsp. vanilla extract
  • 4 T. honey
  • 1 egg white
  • 1 egg white, lightly beaten
  1. Dough: Mix together yeast, sugar, and salt in a large bowl.
  2. Pour in milk, stir until dissolved.
  3. Whisk in 1 c. flour, cover, and let rise in a warm place until doubled, about 15 minutes.
  4. Stir in egg, egg yolk, and vanilla extract.
  5. Knead remaining 2 c. flour and butter into yeast mixture, adding each alternately a little at a time.
  6. Knead until smooth and elastic, about 15 minutes.
  7. Place dough in a large bowl, cover, and let rise until doubled, about 1 hour.
  8. Filling: Simmer poppy seeds in a medium pot full of water until soft, about 40 minutes.
  9. Drain and puree in a food processor, about 4 minutes.
  10. Returen poppy seed puree to same saucepan.
  11. Add sugar, butter, raisins, almonds, vanilla extract, and honey.
  12. Cook stirring, over medium-low hear for 15 minutes.
  13. Set aside to cool.
  14. Preheat oven to 350F, Prepare baking sheet with parchment paper.
  15. Dough: Roll out dough to a 16"x12" rectangle.
  16. Filling: Whisk egg white in a bowl until stiff peaks form.
  17. Fold into the poppy seed filling.
  18. Spread over dough, leaving a 1" border all around.
  19. Fold dough lengthwise in thirds to form a long log.
  20. Pinch ends to seal.
  21. Brush cake with beaten egg white and bake until it sounds hollow when tapped, about 50 minutes.

Results: I had difficulty finding the quantity of poppy seeds at a reasonable price. I think I paid about $15.00 for 8 oz. So, heads up. I've never cooked poppy seeds to make a paste. That was interesting. I wouldn't classify this as a cake; I think it's more like a bread. For me, and the other 7 tasters, the poppy seeds were just too much. We scraped a lot of the paste off, money down the drain.

Bottom Line: Not my thing. Hoping no one had to do a drug test. LOL
