Snickerdoodle Crumb Cake-USA #154
A cross between a crumb cake and a snickerdoodle cookie. Layers of rich buttery batter, crumbly streusel and cinnamon sugar, topped with crunchy buttery, cinnamon sugar. The cream of tartar lends a subtle tang and a nice chew. So quick and easy and all ingredients are pantry basics.Streusel:
1/2 c. all-purpose flour1/2 c. packed light brown sugar
1/2 tsp. kosher salt
1/2 stick cold unsalted butter, cut into pieces
Topping:
1 tsp. ground cinnamon2 T. sugar
Cake:
1-1/2 sticks unsalted butter, melted and cooled,plus more for pan
1-1/2 c. all-purpose flour
1/4 tsp. baking soda
1/2 tsp. cream of tartar
1/2 tsp. salt
1/2 c. packed light brown sugar
1/2 c. sugar
3 eggs, room temperature
- Streusel: Whisk together flour, brown sugar, and salt. Using your hands or a pastry cutter, cut in butter until small to medium clumps form. Refrigerate until ready to use.
- Topping: Stir together cinnamon and granulated sugar; set aside.
- Cake: Preheat oven to 350F. Butter an 8" square baking dish and line with parchment, leaving a 2" overhang on two sides. Butter parchment.
- Whisk together flour, baking soda, cream of tartar, and salt.
- In a separate bowl, whisk together butter, both sugars and eggs.
- Add flour mixture; stir to combine.
- Spread 1/2 of batter into bottom of dish. Sprinkle with 1/2 of cinnamon sugar.
- Dollop remaining batter on top; spread evenly. Sprinkle evenly with streusel, then remaining cinnamon sugar.
- Bake until a tester inserted in middle comes out clean, 30-35 minutes.
- Let cool completely. Lift cake out of pan using the 2 parchment overhang. Cut and enjoy!
Results: Delicious and so easy. I made this with my grandson. I try to do recipes that aren't complicated and quick so that he can see the results before he goes home and I start Happy Hour.This cake was gobbled up. It was yummy served with bacon and coffee. (and I wonder why I can't lose weight, lol).
