Flourless Chocolate Cake- Italy #70

This is a dense, chocolatey, fudge, cake. A favorite dessert for those on a gluten-free diet.

Ingredients:

4 oz. chopped bittersweet chocolate
1/2 c. unsalted butter
3/4 c. sugar
3 eggs, slightly beaten                                      
1/2 c. unsweetened cocoa powder

  1. Preheat oven 375F. Butter 8" round cake pan. Line bottom with parchment paper.
  2. In a double boiler, melt chocolate with butter over simmering water, until smooth. Remove from heat.
  3. Whisk sugar into chocolate mixture.
  4. Add eggs and whisk well.
  5. Sift cocoa powder over chocolate mixture and whisk until just combined.
  6. Pour batter into pan and bake in middle of oven 25 mins., or until top has formed a thin crust.
  7. Cool cake in pan on a rack 5 minutes, invert on a serving plate. Dust with additional cocoa powder and/or confectioners' sugar. Serve with a sorbet.

Results: Quick and easy. Even though this cake is a single layer, 8" cake, it actually serves a lot of people because it is so rich only serve small slices. The sorbet helps to cut some of the sweetness.

Bottom Line: I've made this cake many times. I've also made another version, which is more cake than fudge. Everyone loves it, which ever the version.
