Flourless Chocolate Cake- Italy #70
This is a dense, chocolatey, fudge, cake. A favorite dessert for those on a gluten-free diet.Ingredients:
4 oz. chopped bittersweet chocolate1/2 c. unsalted butter
3/4 c. sugar
3 eggs, slightly beaten
1/2 c. unsweetened cocoa powder
- Preheat oven 375F. Butter 8" round cake pan. Line bottom with parchment paper.
- In a double boiler, melt chocolate with butter over simmering water, until smooth. Remove from heat.
- Whisk sugar into chocolate mixture.
- Add eggs and whisk well.
- Sift cocoa powder over chocolate mixture and whisk until just combined.
- Pour batter into pan and bake in middle of oven 25 mins., or until top has formed a thin crust.
- Cool cake in pan on a rack 5 minutes, invert on a serving plate. Dust with additional cocoa powder and/or confectioners' sugar. Serve with a sorbet.
