Chocolate Depression Cake- #59

This recipe originates from the Great Depression. It's egg and diary free, these would have been rationed during the Depression. The original recipe doesn't have frosting. Some may want to put a frosting on the cake. I've chosen to sprinkle confectioner's sugar on top.

Cake:

1-1/2 c. flour
1 c. sugar
1/4 c. unsweetened cocoa powder
1/2 tsp. salt
1 tsp. baking soda
1 tsp. vanilla extract
1 tsp.white vinegar
1/3 c. vegetable oil
1 c. water
  1. Preheat oven 350F. Grease an 8x8 square pan.
  2. Combine flour, sugar, cocoa powder, salt and baking soda in a large mixing bowl.
  3. In a separate bowl combine vanilla, vinegar, oil and water.
  4. Add wet ingredients to dry ingredients and mix until completely combined and no lumps remain.
  5. Pour batter into a greased square pan.
  6. Bake 30-35 mins, or until toothpick inserted in center comes out clean.
  7. Let cake cool completely before frosting.

Results:So easy! If you need a quick dessert this is it. The directions didn't call for a mixer so I didn't use one. It came out light, moist and delicious. Nothing else to say. Just a quick and easy, chocolate cake. I used a doily to make the decorative top. You just place a doily on top of the  very cooled (otherwise the sugar will melt) cake. Using a small sifter, sprinkle confectioner's sugar over doily then gingerly lift it up. I should have made a video of this strategy. Next time. 

Bottom Line:Good cake to serve with ice cream. A hit with everyone, especially those who don't like real sweet desserts. I'll keep this recipe on hand for those unexpected guest.
