NY Crumb Coffee Cake- USA #50

By request from a family member, I am making a New York Crumb Coffee Cake. So for all your New Yorkers here is your delicious, classic crumb cake.  For everyone else this is a tender cake topped with large chunks of cinnamon sugar and yumminess.

Crumb Topping:

1/3 c. sugar
1/3 cup dark brown sugar
3/4 tsp. ground cinnamon
1/8 tsp. table salt
8 T unsalted butter, melted and still warm
1-3/4 c. cake flour

Cake: 

1-1/4 c. cake flour
1/2 c. sugar
1/4 baking soda
1/4 tsp. table salt
6 T. unsalted butter, softened and cut into small pieces
1 egg
1 egg yolk
2 tsp. vanilla
1/3 c. buttermilk

Addtional:

powdered sugar for sprinkling on top

Crumb Topping:


  1. Add sugar, brown sugar, cinnamon, salt and butter into a bowl.
  2. Mix together and add in cake flour until combined. form into a dough ball. Set aside.

Cake:

  1. Preheat oven to 325F. Use baking spray or butter and flour a square 8x8 pan.
  2. In a stand mixer, add flour, sugar, baking soda and salt.
  3. On low speed, add butter in pieces.
  4. Mix for 1-2 minutes, or until you no longer see the butter and the mixture looks like a crumble.
  5. Add in your remaining cake ingredients, egg, egg yolk, vanilla and buttermilk.
  6. Mix until light and fluffy, another 1-2 minutes.
  7. Pour and spread cake batter into greased baking pan.
  8. Take the topping dough and break apart into chunks about the size of marbles over the dough in a uniform pattern.
  9. Bake for 35-40 minutes, or until a knife is inserted and comes out clean.
  10. Let cool, then dust with powdered sugar.

Results: I was asked to make this coffee cake for a gift. So, I wanted to make sure I could make an acceptable one. Therefore, this was my first attempt. I didn't use dark brown sugar this time. I definitely will for the next one. The cake mixture was very doughy, more like a bread than a cake.  It's not as moist as I had hoped. Hopefully, the next one will be a little better.

Bottom Line: I'll try this recipe one more time. If it doesn't come out more moist it must be the recipe. We'll eat it anyway, especially with bacon and a cup of coffee.
