One-Bowl Chocolate Cake- USA #46

A quick and easy chocolate cake with chocolate frosting.

Cake:

3/4 c. unsweetened cocoa powder, plus more for pans
1-1/2 c. all-purpose flour
1-1/2 c. sugar
1-1/2 tsp. baking soda
3/4 tsp. baking powder
3/4 tsp. salt
2 eggs
3/4 c. low-fat buttermilk
3/4 c. warm water
3 T. safflower oil
1 tsp. vanilla extract

Chocolate Frosting:

2-1/4 c. confectioner's sugar
1/4 c. unsweetened cocoa powder
pinch of salt
6 oz. cream cheese, room temperature
1-1/2 sticks unsalted butter, softened
9 oz. bittersweet chocolate, melted and cooled slightly
3/4 c. sour cream

  1. Preheat oven to 350F. Butter 2- 8" round cake pans, dust with cocoa.
  2. Sift cocoa, flour, sugar, baking soda, baking powder and salt into the bowl of a mixer.
  3. Beat on low speed until just combined.
  4. Raise speed to medium and add eggs, buttermilk, water, oil and vanilla.
  5. Beat until smooth, about 3 minutes.
  6. Divide batter between pans. Bake until set and a toothpick inserted into the centers comes out clean, about 30-35 minutes.
  7. Cool for 15 minutes. Then turnout on racks to cool completely. 

Frosting:

  1. Sift together sugar, cocoa and salt.
  2. Beat cream cheese and butter with a mixer on medium speed until smooth.
  3. Reduce speed to low, gradually add sugar-cocoa mixture.
  4. Slowly pour in chocolate.
  5. Add sour cream. Beat until combined.

Results: It came out good. However, I had to use more than 1 bowl. If you include the shifter, measuring utensils and the fact cocoa powder is not easy to clean-up, I would not say this was "easy". It was messy. I did not have safflower oil. I used canola oil, which can be substituted. I hate to buy a quart of buttermilk and then just use 1 cup. So, I buy buttermilk powder and make it 1 cup at a time. I make it in a food processor to insure no lumps. 

The frosting recipe makes more than enough frosting. Next time I would make 1/2 the mixture. The sour cream gives it a bit of a tangy taste.

Bottom Line: It's chocolate cake. Good but not earth shattering.
