Chiffon Cake with Orange Icing- United States #45
A light, airy cake made with vegetable oil, eggs, sugar and flour. Serve frosted or unfrosted.
Ingredients:
2-1/4 c. cake flour
1 T. baking powder
1-1/2 c. sugar
1 tsp. salt
1/2 c. vegetable oil
6 egg yolks
8 egg whites
3/4 c. cold water
2 tsp. vanilla
1/2 tsp. cream of tartar

  1. Preheat oven to 325F. Line bottom of 10" tube pan with wax paper or parchment paper.
  2. Sift flour, baking powder, sugar and salt into a large bowl.
  3. Pour in the oil, egg yolks, the cold water and vanilla, beat until smooth shiny; set aside.
  4. Beat the egg whites until foamy, add cream of tartar and continue beating until stiff.
  5. Blend 1/4 of whites into batter, then fold in remaining whites.
  6. Spoon the batter into the tube pan.
  7. Bake 50-60 mins. or until a knife inserted comes out clean. 
  8. Invert pan on cake rack and cool.
Frosting:
1-1/2 c. sugar
1/4 tsp. cream of tartar
1/8 tsp. salt
1 tsp. orange zest
2 egg whites
1/4 c. fresh orange juice
  1. Mix sugar, cream of tartar, salt, egg whites and juice in a double boiler with simmering water.
  2. Beat steadily over low heat with hand mixer until frosting stands in peaks--5-7 mins.
  3. Remove from heat and continue to beat until thick enough to spread.
  4. Add zest before spreading.
Results: Everything went well. I think the hardest part was cutting the wax paper for the tube pan. Next time I will use parchment paper. The wax paper stuck to the bottom of the cake. I greased the pan also. Before I inverted the cake, I ran a knife around the side and tube. One good shake and it came free. 
The frosting recipe made more than enough. Next time I will make just half the recipe and frost just the top or make the whole recipe, slice the cake in 1/2  horizontally and frost both layers.
Bottom Line: Delicious. Everyone loved it, including babies! The orange flavor is perfect with it. I've made lemon and chocolate chiffon cakes previously so this was a nice change.
