Budapest Roll- Sweden#35

A delicious meringue hazelnut, or almond, roll filled with whipped cream and mandarin oranges.

Roll:

1-1/8 c. (250g) (about 8) egg whites
2 c. sugar
200 g. ground hazelnuts or almonds
75 g. jell-o Instant vanilla pudding

  1. Preheat oven 320F.
  2. In a mixer bowl, beat egg whites until stiff peaks form.
  3. Slowly add sugar on low speed.
  4. Ground nuts. 
  5. Blend nuts with dry pudding mix.
  6. Fold nut mixture into egg whites.
  7. Pipe stripes from 1 side to the other keeping close to each on a 8x10" baking sheet lined with parchment paper.
  8. Bake 20 mins.
  9. Cool.

Filling:

1-1/3 c. heavy cream
1 tsp. vanilla bean paste or vanilla extract
1 (15oz.) can mandarin oranges
1 c. powdered sugar
  1. Drain mandarin oranges. Pat dry.
  2. Whip heavy cream, powdered sugar and vanilla until thick.
  3. Flip cake upside down onto a clean piece of parchment paper.
  4. Spread cake with whipped cream.
  5. Place oranges on top of whipped cream.
  6. Starting at long side roll, using paper to help.

Topping:

2-3 oz. dark chocolate, melted
1 T. powdered sugar for dusting
1 T, dark cocoa powder for dusting
  1. Melt chocolate and drizzle on top.
  2. When chocolate is firm dust the top with powdered sugar and dark cocoa powder.

Results: This was a huge success. It's not as difficult to make as it first appears. With a stand alone mixer it's fairly easy and makes a great presentation. I measured 8x10" on the parchment paper so that as I piped the stripes I would keep everything equal and even. I should have made it a lot larger. I had so much meringue left over. The roll mix made enough for 2 cakes. I used the extra and made meringue cookies. I also used almonds instead of hazelnuts.Vanilla bean paste is expensive so I used vanilla extract. I researched the difference to make sure they were interchangeable and they are. However, the paste has a stronger taste.  I used the 15oz. can of mandarin oranges, which didn't seem like enough. The next time I will use 1-1/2 cans. 



Bottom Line: I made this for a family party and all but one small slice was eaten. It was suggested that it would be even better chilled. This was such a hit I am going to make it again for a party this weekend and make it larger, add more mandarin oranges and chill it.
