Hazelnut Blondies- USA #28

Basic Blondies are a comment bar cake, like brownies. So, I decided to try a different version using hazelnuts. This version is a rich, sweet dessert bar/cake, made with brown sugar, hazelnuts and chocolate Nutella.

Ingredients:

1/2 stick (4 T.) unsalted butter, plus more for pan
2 c. all-purpose flour
2 tsp. baking powder
1 tsp. salt
1-3/4 c. packed light brown sugar
2 large eggs
1 tsp. vanilla extract
1/3 c. hazelnuts, toasted, skins rubbed off with a kitchen towel and chopped.
1 heaping T. (I used 2) chocolate hazelnut spread, such as Nutella, plus more for serving

  1. Preheat oven to 350F.
  2. Butter an 8x11"  baking pan. Line with parchment paper. Butter parchment.
  3. Whisk flour baking powder and salt.
  4. Melt butter. Beat butter and sugar until combined.
  5. Beat in eggs and vanilla.
  6. Add flour mixture and stir until combined.
  7. Stir in hazelnuts and Nutella.
  8. Press dough into pan.
  9. Bake until firm in the center 35-40 mins.
  10. Let cool 15 mins., if you can.
  11. Serve with additional Nutella on top of each piece.

Results: I couldn't find my 8x11" pan, so I used an 8x8" pan. This was a mistake.
The Blondies were so thick that they didn't get cooked in the middle. Actually, the middle was raw. I had to take it out of the oven because I had an appointment to go to. When I got back, 1-1/2 hour later, I tried re-baking it. Didn't work. It took awhile to re-bake and then it was like a rock and darker in color, as you can tell from the picture.  However, having said all that, what we did eat was very good, especially with the Nutella on top and a scoop of vanilla ice cream.

Bottom Line: I'll definitely do this again but not schedule an appointment on the same day. LOL
