Chocolate Brazil Nut Cake- Amazon Region #30
A chocolate cake with brazil nuts as the primary ingredient. A popular dessert cake in Bolivia, Peru and Brazil.Cake:
1/2 c. brazil nuts, toasted (1/4c. for cake and 1/4c. for for topping)1 T. instant coffee
1/2 c. warm water
1 c. all purpose flour
2 T. cocoa powder
1/4 tsp. cinnamon
1/2 tsp. baking soda
1/4 tsp. salt
5 T. butter, room temperature
1 c. sugar
1/4 sour cream
1 large egg
1/2 tsp. vanilla extract
4 oz. semisweet chocolate chips (2oz for cake, 2oz for frosting)
Frosting:
2 oz. semisweet chocolate chips (see cake ingredients)1/4 c. heavy cream
1/4 c. brazil nuts (see cake ingredients)
- Preheat oven 350F.
- Butter and flour an 8" round cake pan. Line bottom with parchment paper.
- Toast the brazil nuts. Chop into fine pieces.
- Mix instant coffee with the 1/2 c. of warm water.
- Sift flour, cocoa powder, cinnamon, baking soda, salt together.
- Cream butter and sugar together.
- Add sour cream, egg and vanilla.
- Melt 2oz. of semisweet chocolate chips.
- Add melted chocolate to butter mixture. Mix thoroughly.
- Gradually add flour, alternating with the coffee.
- Fold in 1/4 c. chopped brazil nuts.
- Reduce oven heat to 325F and bake 45 mins.
- Cool on rack.
Frosting:
- Heat cream in a small pot. Bring to a boil.
- Add 1/4c. semisweet chocolate chips. Stir to melt.
- Add butter.
- Whisk until smooth.
- Drizzle over cake.
- Sprinkle top with 1/4 c. chopped nut
Results: Delicious! Easy to make. The brazil nuts are a bit pricey but well worth it The crunchiness of the nuts really adds to the yumminess of the cake.
