Chocolate Brazil Nut Cake- Amazon Region #30

A chocolate cake with brazil nuts as the primary ingredient.  A popular dessert cake in Bolivia, Peru and Brazil.

Cake:

1/2 c. brazil nuts, toasted  (1/4c. for cake and 1/4c. for for topping)
1 T. instant coffee
1/2 c. warm water
1 c. all purpose flour
2 T. cocoa powder
1/4 tsp. cinnamon
1/2 tsp. baking soda
1/4 tsp. salt
5 T. butter, room temperature
1 c. sugar
1/4 sour cream
1 large egg
1/2 tsp. vanilla extract
4 oz. semisweet chocolate chips (2oz for cake, 2oz for frosting)

Frosting:

2 oz. semisweet chocolate chips (see cake ingredients)
1/4 c. heavy cream
1/4 c. brazil nuts (see cake ingredients)

  1. Preheat oven 350F.
  2. Butter and flour an 8" round cake pan. Line bottom with parchment paper.
  3. Toast the brazil nuts. Chop into fine pieces.
  4. Mix instant coffee with the 1/2 c. of warm water.
  5. Sift flour, cocoa powder, cinnamon, baking soda, salt together.
  6. Cream butter and sugar together.
  7. Add sour cream, egg and vanilla. 
  8. Melt 2oz. of semisweet chocolate chips.
  9. Add melted chocolate to butter mixture. Mix thoroughly.
  10. Gradually add flour, alternating with the coffee.
  11. Fold in 1/4 c. chopped brazil nuts.
  12. Reduce oven heat to 325F and bake 45 mins.
  13. Cool on rack.

Frosting:

  1. Heat cream in a small pot. Bring to a boil.
  2. Add 1/4c. semisweet chocolate chips. Stir to melt.
  3. Add butter.
  4. Whisk until smooth.
  5. Drizzle over cake.
  6. Sprinkle top with 1/4 c. chopped nut

Results: Delicious! Easy to make. The brazil nuts are a bit pricey but well worth it The crunchiness of the nuts really adds to the yumminess of the cake.
