Bolo De Mel- Portugal #29

A traditional Portuguese sweet cake, made with honey, almonds and molasses.

Ingredients:

9 eggs, separated
1/2 c. sugar
2 T molasses
1-1/2 c. honey
1-1/2 T. olive oil
1 T. cinnamon powder
zest from 1 lemon
2 c. flour
1 tsp. baking powder
1 c. chopped almonds
1/2 c. ground walnuts

  1. Preheat oven 350F.
  2. Butter a tube pan, such as an angel food pan.
  3. In a large bowl, beat the egg yolks, honey, olive oil, cinnamon powder, molasses and lemon zest together until smooth and even consistency.
  4. In another large bowl, beat together egg whites and sugar until creamy and smooth.
  5. Pour the egg white mixture into the egg yolk mixture. Mix together by hand.
  6. Add flour, baking powder. Mix thoroughly.
  7. Add chopped almonds and ground walnuts. Mix thoroughly.
  8. Pour into the pan.
  9. Bake 40-48 minutes or when tested, by inserting a cake tester in the middle, it comes out clean.
  10. Cool 15 minutes in the pan. Then flip onto plate.

Results: The original recipe said to bake this cake for 15-18 minutes. However, it took 48 minutes. Very moist and spongy. I didn't find it overly sweet. I sprinkled confectioners' sugar on top.
Bottom Line: I think this would be best served with coffee. It would make a nice addition to breakfast.
