Bolo De Mel- Portugal #29
A traditional Portuguese sweet cake, made with honey, almonds and molasses.Ingredients:
9 eggs, separated1/2 c. sugar
2 T molasses
1-1/2 c. honey
1-1/2 T. olive oil
1 T. cinnamon powder
zest from 1 lemon
2 c. flour
1 tsp. baking powder
1 c. chopped almonds
1/2 c. ground walnuts
- Preheat oven 350F.
- Butter a tube pan, such as an angel food pan.
- In a large bowl, beat the egg yolks, honey, olive oil, cinnamon powder, molasses and lemon zest together until smooth and even consistency.
- In another large bowl, beat together egg whites and sugar until creamy and smooth.
- Pour the egg white mixture into the egg yolk mixture. Mix together by hand.
- Add flour, baking powder. Mix thoroughly.
- Add chopped almonds and ground walnuts. Mix thoroughly.
- Pour into the pan.
- Bake 40-48 minutes or when tested, by inserting a cake tester in the middle, it comes out clean.
- Cool 15 minutes in the pan. Then flip onto plate.
Results: The original recipe said to bake this cake for 15-18 minutes. However, it took 48 minutes. Very moist and spongy. I didn't find it overly sweet. I sprinkled confectioners' sugar on top.
Bottom Line: I think this would be best served with coffee. It would make a nice addition to breakfast.
