Birthday Cake- Unknown Origin #23

Birthday cakes are known universally. It's hard to know who made it first. I decided to do a typical birthday cake but make it a Smash Cake instead. A Smash Cake is a small cake made for that very special 1st birthday. The baby gets to smash it, put there face in it, whatever, because the parents have another big cake for all the guest.
The following is a recipe for a 6" Smash cake with white frosting. if you want a 8" 2 layer cake just double ingredients.

Cake:

1 stick softened butter
3/4 c. sugar
1/2 T. baking powder
1/4 tsp. salt
3/4 tsp. vanilla extract
2 eggs
1-1/2 c. cake flour
1/2 c. milk

  1. Preheat oven 350F.
  2. Lightly grease a 6" round cake pan,
  3. Beat together butter, sugar, baking powder, salt and vanilla on medium high speed until pale and fluffy, about 3 minutes.
  4. Add eggs, continue beating.
  5. Add flour, alternating with milk. Beat until combined.
  6. Pour batter into pan,
  7. Bake for 30-35 minutes or until center is firm.
  8. Cool completely.

Vanilla Frosting:

3/4 c. unsalted butter, at room temperature
2 c. sifted confectioners' sugar
1/4 tsp. vanilla extract
  1. In a mixer, beat butter until pale and creamy.
  2. Add confectioners' sugar, 1/2 cup at a time. Beating well after each addition.
  3. Add vanilla.
  4. Beat until smooth.

Results: This is my go to cake recipe. It's so easy. Making a 6" cake takes a little more patience because it is so tall so the bake time maybe longer. Once the cake cooled, I tried to half it horizontally to make 2 layers. Clearly I did not do it correctly. I didn't allow for the dome top. However, no one noticed. Hang on to this cake recipe and the frosting recipe. The frosting recipe is equally easy and delicious. Two good recipes to keep on hand.

Bottom Line: A favorite cake recipe. It lends itself to so many variations. I highly recommend you save this one.
