Chocolate Beer Cake- United States #13
A moist, rich chocolate cake with walnuts in the frosting. The main ingredient is stout beer!The Cake:
4 oz soft butter (1 stick)
10 oz dark brown sugar
2 large beaten eggs
6 oz all-purpose flour
1/4 tsp. baking powder
1 tsp. baking soda
2 oz cocoa powder
7 fl. oz. stout beer
- Lightly grease 2- 8" round cake pans. Line bottoms with parchment paper and grease.
- Preheat oven 350F.
- Cream the butter and sugar together until pale and fluffy.
- Add eggs, beating well.
- Sift the flour, baking powder and baking soda together.
- Mix cocoa and stout beer together.
- Alternating cocoa/beer mixture and flour mixture into butter mixture.
- Divide equally between the 2 pans.
- Bake for 30-35 mins. or until center of the cake feels springy.
- Cool 5 mins. in pan before turning out on wire rack.
- Once cake is completely cooled spread icing on layers.
Icing:
4 oz confectioner's sugar
2 oz soft butter (1/2 stick)
2 T. stout beer
4 oz dark chocolate
1 oz walnut pieces
2 oz soft butter (1/2 stick)
2 T. stout beer
4 oz dark chocolate
1 oz walnut pieces
- Beat confectioner's sugar and butter together.
- In a double boiler, melt chocolate (don't let it get too hot)
- Fold the chocolate into the sugar/butter mixture.
- Separate 1/3 of the mixture and add the walnuts. Spread on the top of the bottom layer.
- Place 2nd layer on top and spread icing on top and sides.
Result: Needless to say, I bought a scale. It has made a huge difference. Thank you to Amanda for her suggestions. This is an easy, yummy cake. It came out moist, light and chocolatey. It's not a very big cake, 8". The walnuts mixed with the chocolate icing were a delightful surprise in between the layers.
Bottom Line: This is a keeper. I made it this afternoon and it's all gone!
