Chocolate Banana Cake with Chocolate Frosting- United States #16

Chocolate Banana Cake with Chocolate Frosting:

I've already made a banana cake, which was a hit for family and friends, so I thought I would try a chocolate version. I think the chocolate butter frosting by itself will be yummy.

The Cake:
3/4 c. butter, at room temperature
1-3/4 c sugar
2 eggs
1-1/4 c. mashed ripe bananas
1 tsp. vanilla extract
2 c. all-purpose flour
3/4 c, cocoa
1-1/2 tsp. baking powder
1 tsp. baking soda
3/4 tsp. salt
3/4 c. buttermilk

  1. Preheat oven to 350F.
  2. Grease 2-8" round cake pans. Line bottoms with parchment paper, then grease.
  3. Cream butter with sugar until light and fluffy.
  4. Add eggs, one at a time.
  5. Mix in mashed bananas and vanilla extract.
  6. In a separate bowl mix flour, cocoa, baking powder, baking soda and salt.
  7. Add flour mixture  to batter alternating with buttermilk.
  8. Spread into pans.
  9. Bake 40 mins. or until firm in middle.
  10. Cool in pans for about 15 mins.
  11. Turn cakes out and completely cool before frosting.
Chocolate Butter Cream Frosting:
 1/4 c. plus 2 T. cocoa
1/4 c. plus 2 T. warm water
2 sticks of unsalted butter, room temperature
1/2 c. confectioners' sugar
generous pinch of salt
1 lb. semisweet chocolate (can be chips) melted and cool
  1. Whisk together cocoa and warm water until cocoa dissolves.
  2. Beat butter, sugar and salt until pale and fluffy. (3-5 mins.)
  3. Gradually beat in melted, cooled chocolate.
  4. Mix in cocoa mixture.
  5. Let stand 30 mins.
  6. Spread on cake layers.
Results:  Amazing! This is a moist, rich, chocolate cake with a banana flavor The  chocolate butter cream frosting is amazing. I made the swirls on the top by using the backside of a spoon in a circular motion. I smoothed the sides using a cake spatula.

Bottom Line: I will definitely make this again. I served it chilled and with vanilla ice cream. Delicious!
