Chocolate Banana Cake with Chocolate Frosting:
I've already made a banana cake, which was a hit for family and friends, so I thought I would try a chocolate version. I think the chocolate butter frosting by itself will be yummy.The Cake:
3/4 c. butter, at room temperature
1-3/4 c sugar
2 eggs
1-1/4 c. mashed ripe bananas
1 tsp. vanilla extract
2 c. all-purpose flour
3/4 c, cocoa
1-1/2 tsp. baking powder
1 tsp. baking soda
3/4 tsp. salt
3/4 c. buttermilk
- Preheat oven to 350F.
- Grease 2-8" round cake pans. Line bottoms with parchment paper, then grease.
- Cream butter with sugar until light and fluffy.
- Add eggs, one at a time.
- Mix in mashed bananas and vanilla extract.
- In a separate bowl mix flour, cocoa, baking powder, baking soda and salt.
- Add flour mixture to batter alternating with buttermilk.
- Spread into pans.
- Bake 40 mins. or until firm in middle.
- Cool in pans for about 15 mins.
- Turn cakes out and completely cool before frosting.
Chocolate Butter Cream Frosting:
1/4 c. plus 2 T. cocoa
1/4 c. plus 2 T. warm water
2 sticks of unsalted butter, room temperature
1/2 c. confectioners' sugar
generous pinch of salt
1 lb. semisweet chocolate (can be chips) melted and cool
1/4 c. plus 2 T. warm water

1 lb. semisweet chocolate (can be chips) melted and cool
- Whisk together cocoa and warm water until cocoa dissolves.
- Beat butter, sugar and salt until pale and fluffy. (3-5 mins.)
- Gradually beat in melted, cooled chocolate.
- Mix in cocoa mixture.
- Let stand 30 mins.
- Spread on cake layers.
Results: Amazing! This is a moist, rich, chocolate cake with a banana flavor The chocolate butter cream frosting is amazing. I made the swirls on the top by using the backside of a spoon in a circular motion. I smoothed the sides using a cake spatula.
Bottom Line: I will definitely make this again. I served it chilled and with vanilla ice cream. Delicious!
