Bebinca Cake- India #12

A Bebinca cake's main ingredients are coconut milk, egg yolks, sugar and flour, with grated nutmeg.Traditionally, it is a 16 layer cake. Bebinca is served at many celebrations, e.g. births, wedding, holidays.

The Cake:
 600 ml coconut milk
 5 gm (1tsp) grated nutmeg
 12 egg yolks beaten
 500 gm all-purpose flour
 1-1/2 c. clarified butter


  1. Using the clarified butter, butter an 8-1/2"x3" springform pan.
  2. Heat oven on broil
  3. Mix the coconut milk, sugar and nutmeg together.
  4. Add egg yolks.
  5. Mix well.
  6. Slowly add the flour. (make sure there are no lumps)
  7. Pour about 1/2 c. of mixture into pan.
  8. Broil until golden brown.
  9. Put butter on top of golden layer.
  10. Pour another 1/2 c. of mixture on top.
  11. Broil until golden brown.
  12. Continue these steps until all the mixture is used. 
  13. Finish with a top layer of clarified butter.
  14. Turn out the bebinca onto a wire rack. Cool and cut into slices. Serve with chilled coconut whipping cream.
Coconut Whip Cream:
1 c. heavy cream
1 c. chilled coconut cream
1 tsp. vanilla extract
1/4 c. confectioner's sugar

  1. Using a whisk beater, whip all ingredients together until thick.
  2. Refrigerate until ready to use.
Results: This was a very time consuming cake. Making the mixture quick and easy, it was very simple. It was the baking that was time consuming. Each layer took 8-10mins. to bake. You have to watch the layers very closely so that they don't burn. This recipe yielded 7 layers, not 16. The finished cake's texture was, as one person described, rubbery. I must confess, I agree. The coconut whip cream really helps with the flavor. The nutmeg was not a strong flavor. I bought fresh nutmeg, which was expensive. I suggest just using ground nutmeg that you probably have in your pantry. Everyone loved the Coconut whip cream. 

Bottom Line: If you plan to make this, or ever have, please let me know the results. Maybe this was a "miss". I 'm not planning on doing this one again but I would still like to know if I did something incorrectly. Moving on to the next cake.
