German Apple Cake- Germany #3

Hello Everyone--

I've made the 3rd addition in cakes from around the world. I have new victims to serve it to
tonight. (lol)  I'm looking forward to hearing what folks think.

#3. German Apple Cake- Germany

This is a moist cake with sliced apples mixed in. The recipe required a 9"x 13" cake pan.  I don't have one, so I used a 9" springform pan.

The cake:

2  eggs
1 c. vegetable oil
2 c. sugar
1 tsp. vanilla extract
2 c. all purpose flour
1tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
4 c. thinly sliced apples- peeled and cored (about 4 apples, depending on size) Use a variety.


  1.  Preheat oven 350F.
  2.  Grease and flour pan-9"x13" or 9"springform 
  3.  In a mixing bowl, beat eggs and oil with an electric mixer until creamy.
  4.  Add sugar and vanilla, beat well.
  5.  Sift together flour, salt, baking soda and cinnamon.
  6.  Slowly add flour mixture to egg mixture until well combined. The batter will be very thick.
  7.  Fold in the apples using a wooden spoon.
  8.  Spread batter into prepared pan.
  9.  Bake for 45mins. or until cake center is done. 
 Once cake is cool sprinkle with a dusting of confectioner's sugar.

Results:  I used 3 different kinds of apples-- Granny Smith, 2 Honey Crisp and Crisp Pink Argentina. I would have preferred to use Cortland but I couldn't find any.  I set aside about 1c. of the flour mixture to toss the apples in. Using the springform pan the cake was taller than if I had made it in the 9"x13" pan.  Therefore, I had to adjust the baking time. It will take closer to an hour.  Everyone enjoyed the cake. The apples didn't have a strong flavor but they definitely made it moist. One of the best part was the crunchy top, which was a surprise.



Bottom line: I would definitely make this again and I would add walnuts. One person suggested making muffins instead of a cake.  I like that idea. Next time.
