 Ballokume Cake/Cookie- Albania #8

Traditionally this cake/cookie is baked for Summer Day, March 14th.    The ingredients are very simple- corn flour, butter, egg and sugar.

The Cake/Cookie

5 c. sugar
2-1/2 c. butter (room temperature)
7 eggs
5 c. corn flour
1 T. water (or 1/2 an egg shell filled with water) You might need more.
  1. Mix sugar and butter until creamy.
  2. Add 1 egg at a time mixing thoroughly.
  3. Add corn flour, mix thoroughly.
  4. Add water.
  5. Heat oven 350F.
  6. Line cookie sheet with parchment paper.
  7. Drop 1T of mixture on cookie sheet to test the mixture. Bake 15-20 mins, until crisp around edges. They should rise. If it works, keep baking. Don't put them close together on the cookie sheet, they spread.
Results:  Even though this recipe appears very easy, I've had one heck of a time getting this right. The serving size was for 15 people. I decided to only make 1/2 the measure.  I also used a stand mixer. They came out very thin. I never got a rise.  They tasted good but looked awful. I fed them to the crows, who thoroughly enjoyed them. I did this yesterday.
I started again today. I bought finer ground corn flour, more butter and sugar.  I made the full mixture, 15 servings. I mixed everything with a wooden spoon. I measured exactly.  I lowered the oven temp to 300F and chilled the dough, which didn't make a difference. Again, they would rise but then go flat. I then tried making them smaller-1 tsp measurement. The crows are circling. Again, a rise and flat.  I also tried increasing the oven temp to 375F. Same thing happened. What am I doing wrong? Can anyone tell me? Another recipe said use melted butter. That didn't work either. Now I need to know how to get rid of crows.

Bottom Line: I'm moving on to the next cake. I know I will have hit and misses while doing this challenge. This was definitely a miss.  They taste good but look like flat, butter cookies.  I'm serving them tonight as just that, butter cookies. Hopefully, the people I'm bringing them to won't be reading this blog until tomorrow. : )
