Welcome back! I'm so excited about how many views I received on my first post. Being so encouraged, I got back to baking today. I appreciate your feedback, whether public or private. I am an amateur baker and I continue to learn new strategies and I hope you will help me.
With that said, here is my next cake---------
#2 Angel Food Cake- United States
This is a moist, single layer sponge cake. It is made with egg whites, flour, sugar and cream of tartar. No butter! It pairs well with fresh fruit and whipped cream.
I purchased a 10" Angel Food Cake tube pan. I bought one that had a silicone coating and removable bottom.
The cake:
12 egg whites
1 tsp. cream of tartar
1/2 tsp. vanilla extract
1/2 tsp. almond extract
1-1/4 c. cake flour
1-3/4 c. sugar
1/4 tsp. salt
Results: I'm pleased to say the cake was just as it should be, golden, moist and delicious.
Bottom line: I would totally make this again. It's actually quite easy and versatile.

- Beat egg whites until they form stiff peaks, about 4-1/2 minutes.
- Add cream of tartar and extracts.
- Sift together flour, sugar and salt. Repeat sifting 5 times. (this is important to do)
- Gently fold in the egg whites into the dry ingredients.
- Pour into the ungreased tube pan.
- Place cake in cold oven. Then turn the oven on to 325F.
- Bake for about 1hour, or until cake is golden.
- Invert cake, and allow it to cool in the pan on a rack. When throughly cooled remove from pan.
Results: I'm pleased to say the cake was just as it should be, golden, moist and delicious.
